Belgian endive can be a bitter lettuce on its own, which is why it’s good to pair it with something sweet and savory to balance out the flavor. These fun “endive boats” are filled with toasted walnuts, goat cheese, fresh orange pieces and balsamic drizzle. SO GOOD.
If you remember from one of my previous posts, I made these as an appetizer for a wonderful dinner party. They are also quite easy to make and pack some impressive nutrition.
Endive Boats
Serves ~12
2 heads of Belgian endive, leaves separated, lightly rinsed and patted dry
6 oz goat cheese
1/2 cup walnuts, toasted and chopped
1 large orange, chopped into small bite-size pieces
A nice thick (aged) Balsamic vinegar for drizzling
-Layout your endive leaves on a serving platter/plate so they sit as boats.
-Fill em up! Add 2-3 orange pieces into each boat, followed by the cheese and walnuts.
-Drizzle the balsamic over all leaves.
