Right now I’m visiting Canada with my boyfriend and his family. And I’m loving every minute of it. Well, with the exception of the couple seconds spent smacking my head on the ice during a ski sesh. And falling oddly on my thumb, giving it free reign to bend in ways that it should not. However, it’s my third time seeing snow, and my second time skiing in it, so I can’t be too hard on myself.
Spending 6 hours skiing all over these massive mountains makes us all terribly hungry. As a side dish, this orzo mixed with some tasty veggies was perfect.

Asparagus and Swiss Chard Orzo
1 lb Orzo, cooked
1/2 red onion, chopped
1 bunch asparagus, chopped
3 cups swiss chard, leaves and stems, chopped
1 yellow bell pepper, chopped
3 cloves garlic, minced
2 TBS olive oil
1 lemon, juiced and zested
salt and pepper to taste
- Saute all veggies with 1 TBS oil, starting with the onion. Allow it to soften and become aromatic before adding the rest of the veggies. Season with salt and pepper throughout. With 1 minute cooking time left, add the garlic to finish.
- Add the remaining TBS oil to orzo, as well as the veggies and stir to combine.
- Lastly, add the lemon juice and zest.
- Chow down.
