When I first learned about this awesome peanut butter pumpkin duo, I quickly became obsessed. For weeks upon weeks I would throw it in my oatmeal, spread it on toast, or just eat it by the spoon. I couldn’t even eat apples without the stuff. Eventually, I took a hiatus from this addictive behavior; but now I’m back, full force. Who knew that a simple mixture of canned pumpkin, peanut butter, honey and cinnamon could be such a delicious and healthy treat?
I can’t believe I haven’t shared this recipe before now. The only reason I can think of is that I was incessantly posting oatmeal recipes during my peanut butter-pumpkin obsession, and so I may have thought to give my readers a break from all things oatmeal. Unfortunately, this oatmeal just didn’t make the cut beforehand. So here it is….
Peanut Butter Pumpkin Oatmeal
1/2 cup rolled oats
3/4 cup milk of your choice
hearty dash of cinnamon and vanilla
1/4 - 1/2 cup of peanut butter pumpkin dip
Fresh fruit and nuts/seeds for topping (optional - I used fresh strawberries, pepitas and chia seeds)
-Heat oats, milk, cinnamon and vanilla in pot on stove until cooked.
-While oatmeal is still hot, add the peanut butter pumpkin dip and stir in.
-Top with fruit, nuts and seeds and enjoy!
