Don’t like beets? Please try them this way before casting them aside for good. The oranges really bring out the sweetness of the beets here, and the goat cheese adds a nice savory flavor to it all.

Orange Beet Salad
Serves ~15 (Dad grew tons of beets this year so I took the extras off his hands - hence the amount of servings here)
10 cups boiled beets, peeled and chopped
3 large oranges, peeled and chopped
1/2 cup red onion, chopped
6 oz goat cheese
1/4 cup white balsamic vinegar (optional)
Salt and Pepper to taste
- Combine all ingredients and chill before serving.
