Roasted Broccoli Latkes

Ingredients
1 head broccoli, chopped into small pieces
4 red potatoes, grated
4 cloves garlic, sliced
2 eggs
4 TBSP almond meal (you could also use flour)
Olive oil
salt and pepper
1. Preheat oven to 375. Place broccoli and garlic in large bowl and toss with 1-2 TBS of olive oil. Sprinkle with salt and pepper and toss again to coat evenly. Place broccoli on lined oiled baking sheet and bake for 20-25 minutes, or until broccoli is cooked and slightly crispy.
2. While broccoli cooks, grate potatoes. Squeeze as much water out of potatoes as you can and place into large bowl. Add eggs, almond meal (or flour), broccoli and sprinkle with salt and pepper. Mix until thoroughly combined.
3. Heat a fry pan over medium heat and add 2 TBSP oil. Shape latkes into small patty-like shapes and place in pan once oil is hot. Cook for 3 minutes on each side, or until each side is golden brown.
Enjoy these latkes with a big salad or as a side to some soup!

      Hi! You could use 1 Tableapoon of chia seeds mixed in 3 Tablespoons of water. Let it sit for a few minutes to allow the chia seeds to become gelatinous.

      Hi! Do you have chia seeds? You could mix 1 tablespoon of chia seeds with 3 tablespoons of water to replace one egg. Let the mixture sit for a few minutes to allow it to thicken.
