Let me start by saying that I have NEVER been a fruit-in-salad kinda gal. This is to date the only time I have enjoyed that combination. This salad started as throwing together some ingredients my mom had in her fridge while I was home for the holidays last year and it turned out to be a beautiful staple salad in my life since. The ingredients are kind of winter-y(even the colors look like Christmas!) but it has been quite refreshing this summer also.
The combination of the tangy salty feta, sweet pomegranate, and bite from the arugula is perfection.
Pomegranate Arugula Salad + Feta and Lime
This salad is also good for variations. I have tried switching out the types of onions, adding avocado, chicken, hard-boiled egg. The possibilities are endless!
Ingredients
-5oz container Arugula and Spinach Mix
-1 cup pomegranate
-1/2 cup crumbled feta
-1/2 of a medium cucumber
-1/4 of a medium red onion
Dressing
-Drizzle olive oil (3 tbsp)
-juice from ½ lime
-dash of kosher salt and pepper
Preparation:
Wash arugula and spinach mix and set aside in a large bowl.
Cut pomegranate in half and press out seeds, reserve 1 cup.
Slice cucumber and onion.
Mix pomegranate, feta, cucumber, and onion in with the spinach and arugula.
Cut lime and squeeze over salad with oil and salt and pepper.
