Peanut Butter Pumpkin Toast

This peanut butter pumpkin mixture is simple, addicting and so versatile. It only takes 4 ingredients and comes together in minutes. It’s rich in heart-healthy unsaturated fats, fiber, and plant based protein, and can add a nutritional boost to your day. Dip apple slices into it, stir it into oatmeal, or spread it on toast. I learned how to make this on one of my first jobs as an RD and to this day I still make it because it’s THAT good. If you haven’t tried it yet, what are you waiting for?

Peanut Butter Pumpkin Toast

Makes 4 servings
What You Need
1/2 cup peanut butter
1/2 cup canned unsweetened pumpkin
3/4 TBSP cinnamon
1 TBSP honey
What To Do
1) Mix peanut butter, pumpkin and honey in a bowl until smooth and creamy.
2) Mix in cinnamon. Be gentle or it will fly everywhere!
Spread on some whole wheat toast (or whatever bread you like), add some chopped almonds for crunch, and enjoy.
