It truly feels like fall today in Charleston - at least this morning it did. I woke up to a 64 degree temperature and it couldn’t have been more pleasant. I just love this time of year. Last night it was cool enough to open up all the windows and let some fresh air into the house. We are still acclimating to our new little home so I was curious to find out which room had the best breeze. It turns out to be the kitchen. Great news for me! I spend quite a bit of time in there, and it gets toasty when I’m using that gas stove .
Needless to say, being outside is a must today. We took Kiki for a walk and then I went out for a nice four mile run around the park. When I got back, I was totally craving a smoothie. A fall-inspired smoothie of course.

Apple Pumpkin Smoothie
Serves 1 thirsty pumpkin lover
1 small apple, cored and chopped
1/4 cup canned pumpkin
1 TBS cinnamon
1-2 TBS maple syrup
1 cup milk (any kind you like)
Pumpkin seeds to garnish
Blend all ingredients in a blender until smooth. Top with pumpkin seeds and enjoy.

I used my new Vitamix to blend this one up (woot woot! Thanks George & Colleen!) and it had no problem processing the apple skins. If you don’t like having bits of skins in your smoothies, peel the apple before chopping and blending. But don’t toss those peels! They’re so nutritious for you - throw them in tomorrow’s oatmeal or cereal.
