This month’s Recipe Redux Challenge couldn’t have fit my needs better. It feels like I’ve been in a time crunch ALL month, and thankfully, these bites just took minutes to throw together. All in the month of August, David and I have moved into a new apartment, started new jobs, got a new puppy AND…..got engaged!! (more on THAT story later)
Time savers are of the essence as of late and and these bites qualify. Just mix together oats, apricots, raisins, coconut oil, honey, chia seeds and basil. Roll into balls, coat with sunflower seeds and bake at 400 for 15 minutes. Done.
The beauty of bites like this is that you can use whatever fruits, oils and herbs you have on hand, in whatever ratio you like. It’s a great way to experiment with new flavors and spice things up in the lunch box department.

Sweet Basil Apricot Bites
Handful oats
Light handful of apricots, diced
Light handful of raisins
5 -7 large basil leaves, chopped
zest of 1 small lemon + juice of 1/2 the lemon
1 TBS coconut oil
1/2 TBS honey
1 TBS chia seeds
1/4 tsp salt
crushed sunflower seeds
- Preheat oven to 400.
- Mix all ingredients together in bowl and pour 1/3 cup boiling water over. Mix together and let ingredients absorb water.
- Roll mixture into 8 balls and then coat lightly with sunflower seeds.
- Place onto greased baking sheet and bake for 15 minutes.
- Let cool and enjoy
