Pesto is delicious, easy to make and can be added to a variety of meals that are in need of some sauce. All you need is a blender or food processor and these 5 ingredients:

herbs + nuts + cheese + garlic + olive oil

Simple right? These are often staples in our house which makes it all the more easy to whip up at any time. Herbs like basil and parsley are full of cancer-fighting phytonutrients like rosmarinic acid and apegenin, respectively. What’s even more amazing is that a synergistic mechanism was found between rosmarinic acid (from basil) and vitamin E (olive oil for example); these compounds work better together in conferring health-protecting effects. Pesto is inherently healthy! How cool is that?

Throw this stuff on whole wheat pasta, rice, quinoa, farro, sweet potatoes, fish, salads, pork tenderloin and chicken…the possibilities are endless.

Basil Cashew Pesto

2 handfuls of basil

1 clove garlic

handful of cashews

1/4 cup grated asiago cheese (or any other hard cheese you like, such as parmesan)

hearty pinch of salt

1/4-1/3 cup olive oil

-Add all ingredients - starting with just 1/4 cup oil - to a blender and blend away.

-Slowly pour in olive oil while blending until you get your desired consistency.
