I love cabbage.

I love potatoes.

Put them together and you’ve got an almost Polish party. The only thing missing is some sausage…but I’m vegetarian, so we won’t go there.

Sweet potatoes and purple potatoes add great color, and are more nutrient dense than white potatoes.

This is great as a side dish or as a light meal, paired with some crusty bread and delicious cheese (which is what we did).

Spicy Cabbage and Potatoes

4 potatoes of your choice (2 sweet and 2 purple), cubed

1 medium onion, chopped

4 cups mixed green and purple cabbage, chopped

2 cloves garlic, minced

1 TBS ginger, minced

2 TBS Herbes de Provence olive oil (any olive oil works)

2 TBS Sriracha (hot chili sauce)

salt and pepper to taste

  • Saute potatoes and cabbage separately, using half an onion for each; heat 1 TBS oil in each pan and saute onion first.
  • The potatoes will take longer, so start them first. Season with salt and pepper.
  • When cabbage has a couple minutes left of cooking time, throw in the garlic, ginger and sriracha.
