These small whole grain ciabatta rolls are great for sandwiches. Just cut them in half, spread on some hummus and top with your favorite veggies. Here, I added sliced red onion, spinach, mustard greens and a thick slice of roasted red pepper. The red peppers came from a jar, which are quite convenient, but you could also roast your own at 400° for about 30-45 minutes.

This hummus was homemade, and is so simple to do. If you eat a lot of hummus, you’ll save a great deal of money by making your own. Make a large batch ahead of time, refrigerate, and take some throughout the week. The cayenne pepper makes it a little spicy, so adjust the spice level accordingly.

Hummus

4 cups garbanzo beans

1 TBS Tahini (sesame paste)

Juice of 1 lemon

1 clove garlic

1/4 cup Paprika

1 TBS cayenne pepper

1/4 cup olive oil

salt and pepper to taste

  • Add all ingredients to food processor or blender and mix until you reach desired consistency
  • If you find you need more olive oil, slowly drizzle into hummus as it is being mixed.

That’s pickled okra on the side. It’s great. It’s even better in a spicy bloody mary.
