This month, The Recipe Redux is challenging members to create unique summer-inspired dishes using California Avocados. Not only is this creamy fruit a nutritional powerhouse, its versatility allows you to eat it during breakfast (avocado, tomato and egg on toast), lunch (guacamole anyone?) and dinner (bean burrito topped with avocado). They are truly one of Summer’s gifts that we should take advantage of while we can.

What better than a velvety, rich cup of chocolate pudding to cool you down on a temperate summer day? And a slightly healthier chocolate pudding at that.

Dark Chocolate Avocado Pudding

Serves 4

2 California avocados, peeled and pitted

3/4 cup 100% pure maple syrup

1/2 cup plain soy milk (or any milk you like)

1 tsp vanilla extract

2 tsp balsamic vinegar

1/2 cup unsweetened cocoa powder

2 tsp salt

Garnish of mint and dark chocolate (optional)

  • Place all ingredients in a food processor and blend until well combined and creamy, about 2-3 minutes.
  • Divide into 4 ramekins and garnish with a sprig of mint and a sprinkle of dark chocolate.
  • Eat right away or chill before serving.

In all honesty, you cannot tell this pudding is made with avocado. That touch of balsamic really hides the flavor of avocado and brings out the depth of the chocolate. I urge you to try this just once. And it’s so simple, I give you no excuse 😉
